Being a vegetarian or vegan doesn't necessarily protect you from consuming those same things. Crops are sprayed with feces and urea as fertilizers, insects and other flying animals - most notably birds - fly over fields of vegetables and excrete their droppings on the plants. The soil itself is composed of microbes and other organisms that live and die there and decompose to nourish the plants, including dead animals. And e-coli contamination seems to happen every year in something - spinach, lettuce, etc. - and gets pulled from the shelves but not before some people end up consuming it.
Point is, everything we consume is derived from something else originally and if you really stop and think about the origins of that spinach salad you can gross yourself out enough to not eat it.
