I have noticed several "premium" juice vendors claim, among the long list of usual suspects (diacetyl, sweeteners, food coloring, etc) that they don't use Acetyl Pyrazine. Now, I understand the various reasons behind the refusal to use the other items, be it coil life, or flavor longevity, or known health issues, but in all my searching I haven't found a reason as to why AP would be on a list of items a vendor is proud not to use.

Can anyone clarify as to why they might refuse to use it?

What you have to realize is the safety data is based on the raw undiluted material and does not apply to the amounts used in a mix. Think of it this way. A straight dose of chlorine powder will kill you if ingested or if the fumes are directly inhaled. But at proper amounts as found in tap water or a swimming pool it is perfectly safe.

The OP is probably referring to acetyl propionyl, not acetyl pyrazine. Acetyl propionyl carries the same inhalation risks as diacetyl/acetoin as related to butter/custard flavorings. I can see why commercial vendors would be moving away from using it.

Thank you for the clarification.

You are 100% correct. The vendor I first noticed it at was TVC, but I couldn't double check as the TVC site is currently offline. I apparently got the two confused.
