No.
Recently, whenever I try to hit my vape, I just cough and cough.

I use a sub ohm build and have for about a couple months now. I had bronchitis a couple weeks ago and I think it may be the remnants of that because when I had the bronchitis I couldn't hit it at all.

I actually started smoking again when I had bronchitis simply for some way to get nicotine, but I'm back to just the vape, but for me, I really need to get the big clouds to be satisfied with my hit. I run a high vg liquid, always, at least 70/30.
Because of the coughing, I have to take small mouth hits or I just lose it.

Any tips, or ideas of what specifically might be causing it? It's like it makes my throat itch and I start hacking up mucous.

Bronchitis can really do a number on your system. I used to get it at least twice a year when I smoked. If it's gone now then everything in there is pretty much newly healed and can be sensitive for awhile. Smoking was always easy when I was sick but afterwards it really felt weird and I'd cough and cough on it. Besides the obvious of consulting with your doctor, I recommend dialing it back for awhile and working your way back up to where you're comfortable. I'm willing to bet you didn't start off with the big clouds when you first started vaping. You gotta walk before you run. This is pretty much the same thing. Gotta work your way back up there. Drink lots of water as well to lubricate everything in there.
But again. See your doctor as well.
