Preparation: 50/50 12%, 70/30 14-20%
"Unmistakable Neapolitan sfogliatelle." Delicious puff pastry with ricotta cheese and candied fruit in the background - such is the delicacy the producer promises to those who love the dessert line, making this a truly special steaming in this category. I blended at 18%, as the 14% blend proved a little too little afterwards.
The aroma has the distinctive milky ricotta cheese smell, mixed with a pleasant fruity scent that also has a slight fried dough support.
The flavours don't go in any other direction either, with ricotta being the main protagonist, along with a hint of candied fruit and freshly baked pasta. I can't really compare the taste of the cheese to anything else, it's deliciously milky, which produces a pleasantly sweet slightly cottage cheese or something similar . Not overdone but present throughout the steaming process. The candied fruits, of which there can be more than one kind, are subtly and sweetly integrated and intertwined with the cheese to complement each other. It leaves the pasta at the end, which you can really only taste at the end of the steam, giving a slight fried flavour to this creamy cheese, and this is what makes the sfogliatelle itself complete.
Our Italian friends have really gone the extra mile: what they have produced is a truly delicious and special steaming, entitling the flavour to the 'quality' seal, and also to put their other products to the test.
